With authentically tangy Chinese spices. Using free range British duck and a little traditional breed British pork, they created this salami to include the Sichuan flower pepper which is a common ingredient in much cooking in the Sichuan province of China. Sichuan flower pepper is not a true ‘pepper’ but is the dried flowering seed pods of a tree that only grows in this part of the world. It does not have a hot flavour but instead a curiously sour and tangy flavour which cuts nicely through the richness of the duck. If chewed Sichuan flower peppers contain a chemical which will make your whole mouth go tingly and numb, a sensation which is highly prized by locals, however you would need to eat rather a lot of salami to get this effect!
