Capreolus Air dried beef (bresaola)

The silverside from grass fed West Country beef (predominantly from Fossil Farm, Winfrith Newburgh, Aberdeen Angus) is cured with herbs, spices and port. It is then air-dried for several weeks before being sliced wafer thin. The classic way to serve would be with salad of lettuce and rocket with shavings of parmesan and a drizzle of good olive oil.
