We’re so pleased to work with David and Karen Richards. They’re serious players in the British cured meat scene, and have (rightly) won multiple awards for their amazing products. We love their air dried loin and Dorset coppa, made using Oxford Sandy and Black pigs from the brilliant Sam’s Pigs. Their silverside of Dorset bred Aberdeen Angus beef, and port marinated, air dried and smoked local mutton are remarkable.
