Choose below from one of our hands-on butchery/curing classes or an indulgent tasting evening.  Unless otherwise stated, all our events are held here at our Borough Market HQ, near London Bridge.  We can also run a private event for you.

Our famous meat and wine pairing evening! We match at least four different wines with eight different cuts of British cured meat, with some sensational results. After the 1.5 hour long tasting part of the evening, guests are welcome to stay and enjoy our simple bar and food offer, allowing you to chew the fat and sup fine wine for a good while longer.

Cured Meat Butchery is our flagship Meat School course, where you'll learn about provenance, butchery skills, and curing. You’ll get stuck in and find out how to break down a pig carcass for the purposes of curing, the essentials of fermentation and preservation of meats, butchery and knife skills, and how to make guanciale and pancetta style meat at home.

Meat + Beer Pairing

Craft British beers and artisan British cured meat. A match made in heaven. Learn about a range of at least five different beers from an independent brewer, and taste five different cuts of meat to match.
