Leading British farmers and butchers of traditional breed lambs, Northfield Farm, are neighbours of ours with a renowned butchery in the heart of Borough Market. Son of the business owner and Head Butcher, Dom McCourt, will lead you through a three hour session breaking down these fine lamb carcasses starting with knife skills, looking at how good husbandry creates better meat and carefully showing you how to make the most of your lamb at home – and how to begin preserving the meat through dry curing. A rare opportunity to work up close with one of Borough Market’s best butchers in an intimate class of just 10 customers at Cannon & Cannon HQ next to London Bridge. Price includes meat to take home.
