Meat School is going on a Break

We have been bowled over by the interest, booking numbers and absolute love that our Meat School has been lucky enough to receive over the last two or three years. We have taught an army of you how to take the first or next steps in butchery and have turned a lot of pigs heads into cotechino. What is not to love?

Cannon & Cannon is growing and we are fresh out of space at our much loved Borough Market wholesale headquarters. From this 1000 square foot of space we have our eight full time employees stationed, we run a huge variety of hands-on and tasting courses, we supply over 250 of the best food businesses in the UK with exceptional British cured meats and we run our eight strong market stall operation from it too – not to mention our e-shop sales and fulfillment. That is a lot of action for 1000 square feet and it simply cannot take the strain any more!

We are moving. Yes, it is time to up sticks, pack all our troubles and hot foot it out of here. Fear not though, we will still have our two markets stalls at our dear old Borough Market and we will hope one day to open the first ever British cured meat shop here – though as you will imagine competition for permanent retail space here is fierce. We made Cannon & Cannon into a ‘thing’ here at Borough and it will always be our home from home. Remember to #LoveBorough folks for now and always.

Many of you, being savvy food shopping types, will have already heard of Spa Terminus in Bermondsey. In many ways this is what Borough Market was like many years ago when wholesale and production were the focus of the market and retail was secondary and only for those for whom ‘if they knew, they knew’. Spa Terminus houses the headquarters of hero businesses such as Neals Yard Dairy, Natoora, Ham & Cheese Co, Monmouth Coffee and Kernel Brewery and now, we are delighted to say, as of November of this year it will become the Headquarters for Cannon & Cannon too.

We are set to build and open a new 4500 square foot facility which will future proof our business and enable us to take up a whole host of new contracts, improve our online offer and to house a state of the art slicing and packaging facility so we can work with our artisanal suppliers to put more of the finest British cured meats onto the shelves of your favourite retailers and onto the plates in your most loved restaurants.

Oh, and you should note that every Saturday morning from next year we will be opening our arch up (along with all the other fantastic traders) to retail so you can take a look inside our business and get to the very best and freshest produce. After all, when you know, you know. And now you do.

Whilst we transition, we will be temporarily closing Meat School and intend to reopen it for courses in January with a whole new model, look and feel with improved courses and location (though it will not be at Spa Terminus in Bermondsey as our new HQ will be for wholesale and production only).

We hope you understand and we really hope you will be back when we re-launch to test out the new model and peruse the improved range of courses. There are still some courses with availability which are running until the end of September, so before we disappear for a bit, be sure to join us for a last hurrah!

It is not ‘goodbye’ from Meat School, it is only a ‘see you later (alligator)’.
