In 2011 we arrived at Borough Market with a bag of cured sausages and a flip up table. That year Cannon & Cannon sold the equivalent of 20,000 sausages. Not bad.
From an original staff of 1 we now employ 9 full time staff and an army of part time meat heroes throughout London as well as online, and help make good our vision to create a whole new category of innovative and superb quality, locally sourced British charcuterie.
We now sell the equivalent of 300,000 sausages per year — and we have an opportunity to sell a lot more too. The number of commercial producers of British charcuterie has risen from fewer than 20 to more than 200 in the last six years and Cannon & Cannon has a unique position to capitalise on that opportunity.
