Cured Meat Butchery is our flagship Meat School course, where you'll learn about provenance, butchery skills, and curing. You’ll get stuck in and find out how to break down a pig carcass for the purposes of curing, the essentials of fermentation and preservation of meats, butchery and knife skills, and how to make guanciale and pancetta style meat at home.
